Students can write in journals or use blogs to answer open ended problems, respond to a prompt, or reflect on the lessons learned in class over a week long (or longer) period.
Show students a graph and have students write a paragraph to describe it.
Have students write everything they know about a topic (good pre-assessment/then post assessment)
